
INGREDIENTS
1 Cup Oats (I use old fashioned or three whole grain)
2 Cups Water
1 Teaspoon Veggie "Better Than Bouillon"
1 Cup Black Beans (or your favorite)
1 Cup Chopped Cabbage
1 Cup Chopped Kale
1-2 Large White Mushrooms
1/4 Jalapeno
1/4 Onion
2 Diced Garlic Cloves
INSTRUCTIONS
Boil water, bouillon, and oats until thick yet still watery in consistency
Add chopped onion, garlic, and jalapeno
Simmer for a few minutes
Add chopped cabbage and kale and cover
*The goal is to cook the greens down, but not until they completely soften or lose color, so simmer on low
Add black beans and mushrooms
Stir and simmer until mixture is thick and heated fully, but with greens still colorful and crunchy
Add spice if necessary--I add a tiny bit of sriracha because I'm a spice head!
